CAULIFLOWER CHOWDER WITH BACON CRUMBS
SERVES 4 PREP 20 MINS COOK 20 MINS
• 2 tbsp olive oil • 2 carrots, chopped • 2 celery stalks, chopped • 1 onion, sliced • 1 garlic clove, crushed, plus 1 extra, crushed • 4 cups chicken stock • 1 cup milk • 1 bay leaf • 1 head cauliflower, cut into florets • 60g butter, chopped • 3 rashers rindless bacon, thinly sliced • ½ cup fresh breadcrumbs • finely chopped parsley, to serve 1 In a large saucepan, heat oil on medium. Saute carrots, celery, onion and garlic 4-5 mins until tender.
2 Add stock, milk and bay leaf. Bring to the boil on high. Reduce heat to low, simmer 10 mins. Add cauliflower. Cook a further 10-15 mins. Season.
