PAPRIKA-SPICED CAULIFLOWER SOUP
SERVES 4 PREP 40 MINS COOK 1 HOUR
• 1kg cauliflower, cut into florets • 30g butter, melted, plus 20g extra • 4 garlic cloves, crushed • 2 tbsp thyme leaves, plus extra to serve • 1 tbsp Hungarian paprika • ½ tsp cayenne pepper • 1 onion, finely chopped • 6 cups chicken stock •1/3 cup sour cream • shredded zest 1 lemon 1 Preheat oven to 180°C.
