CHICKEN & CHORIZO PAELLA

• 1 tbsp olive oil • 750g chicken thighs, coarsely chopped • 1 cured chorizo sausage, thinly sliced • 1 brown onion, finely chopped • 1 red capsicum, thinly sliced • 2 garlic cloves, crushed • ½ tsp saffron threads • 2 tsp smoked paprika • 1 cup chicken stock • 400g can diced tomatoes • 500g pkt 90-second microwave white long-grain rice • ¾ cup frozen peas • green olives, fresh flat-leaf parsley, lemon wedges, to serve 1 In a 4.5-litre (18-cup) slow cooker, heat oil on sear setting (High).
