PEA & HAM SOUP

• 2 tbsp olive oil • 3 onions, finely chopped • 3 large carrots, peeled, finely chopped • 4 celery stalks, chopped • 4 garlic cloves, finely chopped • 1 tbsp thyme leaves, plus sprigs to serve • 2 litres chicken stock • 1 cup green split peas, rinsed, drained • 1 large (1.4kg) ham hock • 2 cups frozen peas • cream, chargrilled sourdough, to serve 1 In a stockpot, heat oil on medium.
