STIR-FRIED BEEF & GAI LAN

• 2 cups white long-grain rice • ¼ cup vegetable oil • 500g rump steak, thinly sliced • 5cm ginger, peeled, sliced • 2 garlic cloves, crushed • 2 bunches gai lan, stems and leaves separated, cut into 3cm pieces • 250g shiitake mushrooms, sliced • 2 tbsp soy sauce • 2 tbsp shao hsing wine (Chinese cooking wine) • 2 tsp cornflour • 1 tsp sesame oil • chopped roasted cashews, to serve 1 In a large saucepan, combine 4›cups water and rice.
