A study conducted by University of Graz (Austria) in 2020 found people who are physically active come up with more inventive and innovative ideas, compared to people who are sedentary. PORK MEATBALL LAKSA SERVES 4 PREP 10 MINS COOK 15 MINS • 200g pkt rice vermicelli noodles • 500g pork mince • 230g jar laksa paste • 1 tbsp fish sauce • 1 tbsp vegetable oil • 6 green onions, thinly sliced • 3 cups chicken stock • 400ml can coconut milk • 250g snow peas, trimmed • mint leaves, chilli flakes, lime cheeks, to serve 1 Place noodles in a heatproof bowl. Cover with just-boiled water. Separate with a fork and drain well. Set aside. 2 Combine pork mince, 2 tbsp laksa paste and 1 tsp fish sauce. Roll level tablespoons of mixture into balls. 3 In a wok, heat oil on high. Cook meatballs 4-5 mins, tossing, until browned. Add remaining laksa paste and half the onion and…

Tex-Mex fish Add some spice to your midweek meal! SERVES 4 Cut 500g peeled potatoes into thin slices, rinse under cold water, then pat dry on a paper towel. Heat a heavy-based baking dish in a 220°C oven for about 5 mins. Remove dish from oven, spray evenly with cooking spray. Add potato slices in a single layer and bake at 220°C for 10 mins. Turn potato slices in the dish and return to the oven for a further 10 mins or until crisp and golden. When the potatoes are almost cooked, brush 4 x 150g boneless white fish fillets with 2 tbsp lime juice.
