What a week, eh? I was in the Far North for a photo shoot when our flight got cancelled due to a storm. We had to drive five hours to get back to Auckland, which was by then in level 3 lockdown. Yikes! After months of being back in the office, I’d almost forgotten how to work from home, as my neighbours could probably tell from the swearing. (Sorry, guys!) But I’m delighted to share with you this week’s mag, especially our moving interview with cancer survivor Jess Quinn, who won my heart on 2018’s Dancing With The Stars NZ. New findings have proven what people in unpaid caring roles probably already know – they aren’t getting enough sleep! A report commissioned by Carers Australia and conducted by CQUniversity and Sleep Health Foundation revealed some carers have as little as three hours of sleep a night. The top reason for sleep disruption among survey participants was having concerns about the person they care for. Understandably, feeling worried may keep many carers up at night. The report recommends that carers talk to their family and close friends about their concerns, and to ensure their schedule leaves time to have adequate sleep every night.…

PRAWN & PEACH PANZANELLA SERVES 4 PREP 15 MINS COOK 25 MINS • 500g sourdough bread, crust removed, torn • 2 tbsp olive oil • 2 tsp dried oregano • 300g cooked medium prawns, peeled, deveined • 250g buffalo mozzarella, torn • 3 peaches, seeded, chopped • 3 tomatoes, chopped • 1 red onion, thinly sliced • 1 cup chopped parsley leaves • ½ cup drained kalamata olives • 1 cup basil leaves DRESSING • ¼ cup extra-virgin olive oil • 2 tsp honey • 1 garlic clove, crushed • ¼ cup white balsamic vinegar 1 Preheat oven to 200°C. 2 On an oven tray, toss bread, oil and oregano. VEGETABLE & HAM TARTS SERVES 4 PREP 10 MINS COOK 15 MINS • 2 sheets puff pastry, thawed, halved • 190g jar sun-dried tomato pesto • 250g shaved ham, sliced • 100g feta, crumbled • 2 cups frozen peas • 1 bunch asparagus, trimmed, shaved • 60g bag baby rocket leaves • balsamic glaze, to serve 1 Preheat oven to 200°C. Lightly grease and line two large oven trays with baking paper. 2 Place one sheet puff pastry on each tray. Spread evenly with pesto, leaving a 1cm edge. Pea & crispy pancetta zuppa This simple pea soup is anything but boring SERVES 4 Preheat oven to 200°C. Line a baking tray with baking paper. Heat 2 tbsp olive oil in a large saucepan over medium heat, then add 2 roughly chopped small onions, 2 crushed garlic cloves, ½ a roughly chopped celery stalk and 2 peeled and roughly chopped potatoes, along with a few sprigs of thyme. Cook for 3-4 mins or until softened. Add a piece of parmigiano rind (optional) and cover with water.
