Orange Yoghurt Cake SERVES 12 PREPARATION & COOKING 55 MINUTES 2 eggs ¾ cup firmly packed brown sugar 2 teaspoons grated orange rind ¾ cup ground almonds 1/3 cup wholemeal self-raising flour 1/3 cup low-fat plain yoghurt 60g light cream cheese, softened 2 tablespoons icing sugar 1 tablespoon orange juice 1. Preheat oven to 160°C. Grease a 20cm round springform pan, lining base and side with baking paper. 2. Beat eggs, sugar and rind in a small bowl with an electric mixer until light and fluffy.
