GARLIC PRAWN PASTA SERVES 4 PREP 5 MINS COOK 20 MINS 500g penne 1 red capsicum, seeded, sliced 500g frozen garlic prawns, thawed 400g can cherry tomatoes 160g bag baby spinach leaves grated parmesan, black pepper, to serve 1 In a large saucepan of boiling salted water, cook pasta following packet directions until almost al dente. Drain, reserving 1/3 cup cooking water. 2 In the same saucepan, heat a little oil on medium. Saute capsicum 2-3 mins until tender. Halloween monster cupcakes Treat the kids with this spooky sweet! MAKES 12 Preheat oven to 180°C. Place patty cases into two 12-hole muffin pans. In a medium bowl, sift 1½ cups plain flour, 2 tsp McKenzie’s Baking Powder and ¼ tsp McKenzie’s Bi-Carb Soda. In a separate bowl, combine 2 whisked eggs, 1 cup icing sugar, ½ cup vegetable oil, 1 tsp orange essence (optional) and a few drops orange food colour. Mix well. Add the dry ingredients to wet ingredients in two batches, mixing well in between. Add ¾ cup orange juice with pulp and 1 tbsp grated orange zest and mix well. Peter and Tracy Lorimer from Newcastle, NSW, always loved having family dinners. But when COVID-19 hit, they couldn’t travel to see their son Jack, who lived 400km away from them in Gunnedah. 1 PARTY CUP DOLLS Gather together a collection of different shaped plastic party cups. Remove the base off each cup and recycle it. Seal the cups with two coats of Resene Waterborne Smooth Surface Sealer. Carefully pierce a small hole through the neck of the cup where your dolls’ arms will be. Paint each cup inside and out in fun, bright Resene colours.
