Granola goodness
Store and pour this nutty mix for a quick brekkie, snack or dessert
MAKES 6 CUPS Preheat oven to 160°C (fan-forced). Line a large baking tray with baking paper. Place 10 pitted and finely chopped medjool dates, 3 cups mixed nuts (almonds, hazelnuts, walnuts, pecans), ½ cup pumpkin seeds, 1/3 cup buckwheat grouts, 1 cup shredded coconut, 2 tsp pure vanilla extract, 1 tbsp finely grated lemon zest, 1 tsp ground cinnamon, ½ tsp mixed spice, 1 tbsp coconut oil and 3-4 tbsp pure maple syrup (depending on your desired sweetness) in a bowl and mix to combine.
