TUNA PATTY BURGERS
SERVES 4 PREP 10 MINS + CHILLING COOK 10 MINS
2 potatoes, cooked, mashed 425g can tuna, drained, flaked 400g cannellini beans, rinsed, drained, mashed 2 tbsp sour cream 1 tbsp fresh dill, chopped 1 lemon, finely grated zest 2 eggs 1 cup panko crumbs vegetable oil for shallow-frying 4 bread rolls, split, toasted cheese slices, mayonnaise, tomato slices, lettuce, sprouts, baked potato wedges, to serve 1 In a large bowl, combine potato, tuna, beans, sour cream, dill and zest. Lightly whisk 1 egg and stir through. Season and mix well.
2 Using slightly wet hands, form into four even-sized flattened patties.
