Roasted Sumac Chicken with Baby Vegetables SERVES 6 PREPARATION & COOKING 1 HOUR, 15 MINUTES 30g butter, softened 1 tablespoon sumac 1.4kg chicken 500g baby beetroot, trimmed 250g baby carrots, trimmed 250g yellow baby carrots, trimmed 1 tablespoon olive oil ½ cup mint leaves 100g feta, crumbled 2 tablespoons pistachio dukkah 1.
