Apricot-stuffed Pork with Mint & Radish SERVES 1 PREPARATION & COOKING 15 MINUTES 1 small garlic clove, crushed ½ fresh apricot, finely chopped 2 teaspoons finely chopped fresh mint, plus 2 tablespoons fresh small leaves extra 5g butter, softened 235g pork cutlet, trimmed 20g rocket 1 small red radish, thinly sliced 2 teaspoons lemon juice 1. Combine garlic, apricot, mint and butter in a small bowl. Season. 2. Butterfly the pork cutlet by slicing in half crossways, stopping at the bone.
