Chicken with Grapes & Garlic Bread Sauce SERVES 6 PREPARATION & COOKING 1 HOUR 3 small spatchcock chickens (see tip) 60g butter, softened 600g small red grapes, cut into clusters ¼ cup extra-virgin olive oil 2/3 cup verjuice ¼ cup fresh sage leaves micro coriander to serve GARLIC BREAD SAUCE 150g butter, chopped 12 garlic cloves, peeled ¼ cup almond meal 100g sourdough bread, toasted, torn into small pieces 1 cup chicken stock ¾ cup milk ¼ cup lemon juice 1. Brownie & Cherry Trifles SERVES 8 PREPARATION 20 MINUTES (PLUS CHILLING) 85g packet cherry jelly 250g cherries, pitted, plus extra, with stems attached, to decorate ¼ cup cherry brandy 2 x 240g packets store-bought brownie, coarsely chopped 1 cup thick chocolate custard 1 cup thick vanilla custard 300ml thickened cream, whipped to soft peaks dark chocolate, shaved to decorate 1. Reindeer Mud Cake SERVES 8 PREPARATION 20 MINUTES 600g store-bought mud cake 400g store-bought chocolate frosting 2 white mini meringues 2 brown M&M’s 5cm piece licorice strap, thinly sliced 2 Butternut Snap biscuits ¼ cup white choc melts, melted 4 red sour straps 2 Curly Wurlys 3 spearmint leaves 1 round mint 1. What a funny old year this one has been. Or do we say that every year?
