Thai Spicy Lamb & Noodle Stir-fry SERVES 4 PREPARATION & COOKING 30 MINUTES 200g dried rice noodles 1 tablespoon peanut oil 500g lamb backstrap, thinly sliced 3 garlic cloves, crushed 2 fresh small red Thai chillies, finely chopped 2 tablespoons fish sauce 2 tablespoons dark soy sauce 1 tablespoon brown sugar 4 kaffir lime leaves, shredded 3 medium tomatoes, finely chopped 1/3 cup loosely packed fresh Thai basil leaves (see tip) ¼ cup coarsely chopped roasted unsalted peanuts 1.
