Peanut Butter Truffle Eyeballs MAKES 10 PREPARATION DAY BEFORE PARTY, 60 MINUTES (PLUS REFRIGERATION) 375g smooth peanut butter 125g butter, softened 300g icing sugar, sifted 1 tablespoon vanilla essence 325g chopped white chocolate 2 tablespoons butter blue food colouring 100g dark chocolate chips toothpick red food colouring 1. Beat peanut butter and butter in a large bowl. Beat in sugar and vanilla. Cover and cool in fridge for 30 minutes. 2. Roll into small balls. 3. Line 2 baking trays with baking paper. Place balls on trays and cool in fridge for 30 minutes. 4. Melt white chocolate and butter in a ceramic bowl. Microwave for 30 seconds at a time until it is melted and combined. 5.
