Chilli Jam MAKES 3 CUPS PREPARATION 15 MINUTES (PLUS STANDING OVERNIGHT) COOKING 1¼ HOURS 1kg ripe tomatoes, peeled, chopped 2 cups sugar 8 long red chillies, sliced ¼ cup lemon juice or lime juice 1/3 cup white wine vinegar 2 tablespoons fish sauce 2 teaspoons sea salt char-grilled squid, rocket, lemon wedges to serve 1. Place tomatoes and sugar in a non-metallic bowl. Cover with cling film and leave at room temperature overnight. 2. Transfer mixture to a shallow, heavy-based saucepan with all remaining ingredients.
