Spinach & Ricotta Spaghetti SERVES 4 PREPARATION 10 MINUTES COOKING 10 MINUTES 1 tablespoon olive oil 1 small onion, finely chopped 2 garlic cloves, crushed 150g bag baby spinach 375g packet spaghetti, cooked, drained 1 tablespoon extra virgin olive oil 1 teaspoon lemon zest, plus 1 tablespoon juice 4 slices prosciutto, pan-fried, broken into pieces 150g fresh ricotta, crumbled grated parmesan to serve 1.
