Raspberry & Coconut Loaf SERVES 12 PREPARATION 10 MINUTES COOKING 45 MINUTES Preheat oven to moderately slow, 160°C. Lightly grease and line an 11 x 21cm loaf pan with baking paper. In a large bowl, using an electric mixer, beat 125g softened butter, ¾ cup caster sugar and 1 teaspoon vanilla extract together until pale and creamy. Add 2 eggs, one at a time, beating well after each, scraping down sides of bowl. Lightly fold 2 cups sifted self-raising flour into creamed mixture alternately with 2/3 cup milk, beginning and ending with flour. Fold 1 cup frozen raspberries and ½ cup desiccated coconut through.
