Free-form Berry Pie SERVES 6-8 PREPARATION 20 MINUTES (PLUS CHILLING) COOKING 35 MINUTES 1½ cups plain flour 125g butter, chilled, cubed 2 tablespoons icing sugar, plus ¼ cup extra 1 egg, separated 1 tablespoon water 3 cups mixed fresh berries of choice (see tips) 1 teaspoon orange zest ½ teaspoon ground cinnamon whipped cream or ice cream to serve 1. Preheat oven to moderate, 180ºC. Place flour, butter and icing sugar into a food processor and blitz until crumbly. Add egg yolk and water, processing until dough comes together around the blade. 2.
