Almond Butter Pancakes SERVES 4 PREPARATION 15 MINUTES COOKING 10 MINUTES 2 tablespoons coconut oil 1 tablespoon honey 3 large eggs ¼ cup coconut milk ½ teaspoon vanilla extract ¼ cup coconut flour (see tip) ¼ teaspoon cream of tartar 1/8 teaspoon baking soda FRUIT COMPOTE 2pears, sliced ½ cup maple syrup ½ vanilla pod, scraped 250g strawberries, quartered 1. I’m pleased to report that the out-of-control obsessive phase that was Pokémon Go now appears to be over. The children in this house who kept vanishing to roam the streets hunting Pikachu now appear less keen to hit the pavement and the parks. Just like that. One day, all-consuming, the next – over. Roast Lemon & Herb Chicken with Hasselback Spuds SERVES 4 PREPARATION 20 MINUTES COOKING 1 HOUR, 15 MINUTES (PLUS RESTING) 75g butter 4 garlic cloves, peeled, roughly chopped grated zest of 1 lemon, plus extra lemon, halved 1 bunch thyme 1 bunch rosemary, plus extra to serve 1.6kg whole free-range chicken 4 medium potatoes, peeled, halved creamed corn to serve (see tip) 1. I am currently revisiting an obsession from my youth. As a child, for reasons I keep forgetting to ask my mother about, I was not allowed a poncho.
