For nearly a decade, Kelly Gallien stood by helplessly and watched her little girl’s body wrack with uncontrollable seizures. Diagnosed at two with a rare and incurable form of epilepsy known as Dravet syndrome, Paige would convulse at least 500 times a month. Slow-cooked Ale Meatballs SERVES 4 PREPARATION 15 MINUTES COOKING 45 MINUTES 500g pork and veal mince 1 cup fresh breadcrumbs 1/3 cup finely chopped parsley, plus extra to serve 1/3 cup grated parmesan 1 egg, whisked ¼ cup olive oil 1 large onion, finely chopped 1 large carrot, finely chopped 2 stalks celery, finely chopped 4 garlic cloves, crushed ¼ cup tomato paste 2 cups beef stock 300ml pale ale couscous to serve (see tip) 1.
