2 x 200g sirloin steaks Sesame oil for rubbing275g pack cooked rice noodles¼ cucumber, deseeded and cut into half moons250g cherry plum tomatoes, halved6 spring onions, finely slicedHandful Thai (or regular) basil leaves, torn, plus extra to serveHandful coriander leaves, chopped, plus extra to serveHandful fresh mint leaves, chopped, plus extra to serve1 baby gem lettuce, leaves separated30g peanuts, chopped to serve (optional) For the dressing:
