Turkey meatballs in a fragrant broth
Lean turkey or chicken mince help control blood sugar levels as well as aiding weight loss.

500g turkey mince4 spring onions, finely chopped1 bunch coriander, chopped6cm piece fresh root ginger, grated1 large red chilli, finely chopped1 free-range medium egg, beaten1ltr strong chicken stock2 lemongrass stalks, outer layer removed and finely chopped4 lime leaves2tbsp soy sauceOil, for frying200g medium egg noodles
1 Mix the mince, onions, half the coriander, ginger and chilli, and egg, then season. Form into 12 golf ball-sized meatballs. Chill in the fridge.
2 In a large pan, bring the stock to the boil. Add the remaining ginger and chilli, lemongrass, lime leaves and soy. Turn down to a simmer.
