‘Lectins are largely found in plant foods such as beans, pulses, chickpeas, peanuts and members of the nightshade vegetable family. That includes tomatoes, goji berries, potatoes, aubergine and peppers,’ explains Jenna.
They’ve been found to bind to carbohydrate receptors in the body and are therefore not digested in the gut – and, because of this, they’ve become a dietary demon.
