During a visit to The Glenmorangie Distillery in Tain, Whisky Magazine has observed that the ongoing expansion work at the site includes at least one shell-and-tube condenser which appears to be made from stainless steel. This addition suggests that the expansion is not solely envisioned to increase capacity, but may also be a new experimental wing. The stainless-steel condenser can now be seen in-situ beside those of the standard copper variety, while the two new stills appear to retain the size and famous giraffe-like shape of those currently used in the main production area. The planning documents further illustrate the dual-condenser set-up for the spirit still and also reveal that the tower section will boast a laboratory and terrace offering stunning views over the Dornoch Firth. Our man in Japan and resident Japanese whisky expert Stefan Van Eycken, is leading a tasting of what is only the second time in the world the complete ‘full deck’ series of unopened Ichiro’s Malt Card collection, from the Hanyu distillery in Japan, have been brought together; let alone opened. As with many things the origins of the award-winning, global and online retailer, The Whisky Exchange started with a simple idea, humble beginnings, and has gone on to achieve dizzy heights of fame. Being in control is an evocative concept, and temperature is a fascinating test case. An essential question is whether to adapt to the ambient temperature, or use temperature control to override what nature provides. Fermentation, for example, depends on yeast converting all the sugars in the wort into alcohol before it’s too late. The temperature of the wort rises during fermentation, and heat is one reason why yeast expires. Consequently, adapting the pitching temperature (the temperature of wort when adding yeast) to the ambient temperature creates the conditions for a successful, and consistent result. Higher summer temperatures would see yeast getting off to a quicker start, so a relatively cooler pitching temperature slows it down. Tourism at Bourbon distilleries has been around for a long time. Colonel E.H Taylor built the Old Taylor Distillery, now Castle & Key, to be a showplace where people could come and spend the day, and later Julian P. Van Winkle, along with his business partners Alex Farnsley and Arthur Stitzel built Stitzel–Weller in a similar fashion. Guitarist Jeff Beck jumped on the drums when Stevie Wonder took a break from recording the album, Talking Book. Wonder returned, loved the groove and hopped on clavinet. They cooked up some lyrics then laid down a demo. The song evolved into the funk masterpiece Superstition, a gift to Jeff Beck for contributing guitar parts to Wonder's recording session. The Macallan has big plans to expand its already considerable presence in Duty free, through a new programme of airport store boutiques. The first outlet opened at Dubai airport in June this year in partnership with wine and spirits retailer Le Clos, selling a range of prestige expressions and exclusives. A second boutique has now opened at London Heathrow Terminal 5 with World Duty Free. The look of the new Heathrow store features a distinctive oak lattice centrepiece which has been inspired by the famous wavy, grass-covered roof of the new £140m Macallan distillery, which boasts one of the world’s most complicated timber-roof structures.
