Roasted Vegetables & Pesto Sandwich YOU NEED: ½ loaf of white or whole wheat bread ¼ cup basil pesto ½ red bell pepper (diced) ½ yellow bell pepper (diced) ½ zucchini (diced) ½ tsp dried basil ½ tsp dried oregano Sea salt to taste Pepper to taste 2 tbsp olive oil YOU MUST: Preheat the oven at 375o F/190o C, using a round cookie cutter cut out 7-8 rounds from the bread slices and keep aside. Thrills and Excitement My joy knew no bounds when I bought TIHG October issue. As usual, I and my husband laid our hands on our favourite section ‘Ideal Getaway’. The four luxury island resorts were out of the world. We honestly didn’t know which one to select. Each of the four was equally amazing and mesmerising.
