Braised pork neck & shiitake mushrooms
PREP + COOK TIME 2½ HOURS (+ STANDING) SERVES 4
16 (30g) dried shiitake mushrooms1.5kg piece pork neck, fat trimmed2 tablespoons dark soy sauce2 tablespoons light soy sauce5cm piece fresh ginger (25g), chopped coarsely2 cloves garlic, chopped1 stick lemon grass, chopped coarsely4 makrut lime leaves2 tablespoons brown sugar2 whole star anise1 litre (4 cups) chicken stock500g fresh rice noodles1 cup loosely packed fresh coriander sprigs
1 Place mushrooms in a small bowl; cover with warm water. Stand for 30 minutes.
