STOVETOP KIMCHI FRIED RICE

This recipe is vegan, gluten-free, dairy-free and nut-free.
2 tablespoons sesame oil 4 spring onions, cut into 3cm lengths 1 medium brown onion, sliced 3 garlic cloves, crushed 1 tablespoon finely grated ginger 1 cup (220g) kimchi, roughly chopped 500g microwave basmati rice (do not microwave) 2 medium carrots, finely chopped 2 tablespoons gluten–free soy sauce or tamari 2 teaspoons sesame oil, extra Pan–fried eggs, toasted sesame seeds and fresh coriander sprigs, to serve 1 Heat the sesame oil in a wok or a large, deep non-stick frying pan over medium-high heat. Add the spring onions and cook, tossing, for 1 minute. Remove and set aside.
