400g canned chickpeas, drained, rinsed 2–3 tablespoons lemon juice 2 tablespoons extra virgin olive oil, plus a drizzle, to serve 2–3 tablespoons warm water 2 tablespoons tahini paste 1–2 cloves garlic, crushed 1 teaspoon ground cumin ½ teaspoon salt 1 In a food processor or blender, process chickpeas, juice, oil, water, tahini, garlic, cumin and salt until smooth. Serve drizzled with oil and sprinkled with black pepper.
