The common name dandelion comes from the French dent-de-lion, or ‘lion’s tooth’, in reference to the plant’s rough-sawn leaves. Although much maligned in modern times, dandelion has a long list of virtues, not only for human health but also for that of animals and soil. It’s been used medicinally for much of recorded history and every part of the dandelion – leaves, roots, and flowers – is edible. It’s a nutritional powerhouse, rich in betacarotene, fibre, potassium, iron, calcium, magnesium, phosphorus, B vitamins and protein.
