Cheese Straws 3 Ways
MAKES ABOUT 36 WAFERS, 72 STRAWS, OR 64 STARS
2 cups all-purpose flour2 cups shredded sharp Cheddar cheese, room temperature¾ cup cold unsalted butter, cubed1 teaspoon kosher salt½ teaspoon ground red pepper¼ teaspoon garlic powder¼ teaspoon smoked paprika5 tablespoons whole milkGarnish: smoked paprika, ground red pepper
1. Preheat oven to 350°.
2. In the work bowl of a food processor, pulse flour, cheese, cold butter, salt, red pepper, garlic powder, and paprika until combined. With processor running, add milk until a dough forms.
3. For wafers: Roll dough into a 2-inch-wide log. Wrap in plastic wrap, and freeze until firm, 20 to 30 minutes.
4. Unwrap dough, and cut into ¼-inch-thick slices. Using a metal spatula, gently lift, and place ¾ inch apart on ungreased baking…
