WHITE OAK PASTURES LEMON-HERB ROASTED TURKEY

Makes 10 to 12 servings
Pasture-raised turkey meat is richly flavored, lean, and nutritious.
4 teaspoons fresh rosemary, finely chopped
4 teaspoons fresh sage, finely chopped
1 tablespoon fresh oregano, finely chopped
2 lemons, zested and juiced
3 fresh garlic cloves, minced
1/4 teaspoon ground allspice
11/4 cups unsalted butter, softened Salt, to taste Ground black pepper, to taste
1 (12- to 16-pound) turkey*
4 stalks celery, coarsely chopped 1 large yellow onion, coarsely chopped and divided
1 carrot, coarsely chopped
1 dried bay leaf
2 lemons, halved
