Sweet Potato Casserole
MAKES ABOUT 8 SERVINGS
5 pounds sweet potatoes, peeled and cubed2 teaspoons kosher salt, divided2/3 cup sugar3 tablespoons unsalted butter, melted2 tablespoons cane syrup or molasses1 teaspoon pumpkin pie spice1 teaspoon vanilla extract2 large eggs, lightly beaten1/2 cup chopped pecans1 1/2 cups miniature marshmallows
1. Preheat oven to 350°. Spray a 2½-quart baking dish with cooking spray.
2. In a large Dutch oven, bring sweet potatoes, 1 teaspoon salt, and water to cover to a boil over medium-high heat. Reduce heat to medium-low; simmer until tender, about 8 minutes. Drain.
3. In a large bowl, beat sweet potatoes, sugar, melted butter, cane syrup or molasses, pumpkin pie spice, vanilla, eggs, and remaining 1 teaspoon salt with a mixer at medium speed until combined. Spoon into prepared pan.…
