Yield: approximately 8 cups
2 cups dried pasta
11⁄4 pounds ground pork
2 cups chopped onion
1 cup chopped carrot
1 cup chopped celery
2 teaspoons minced garlic
6 cups vegetable broth
2 (15.5-ounce) cans pinto beans
1 (14.5-ounce) can diced tomatoes
1 cup fresh or frozen field peas
11⁄4 teaspoons salt
1 teaspoon ground black pepper
1⁄2 teaspoon ground oregano
2 teaspoons parsley flakes
1. Prepare pasta according to package directions.
2. In a medium stockpot, cook ground pork over medium heat until browned. Add onion, carrot, celery, and garlic; cook until vegetables are tender, approximately 6 minutes. Add broth, beans, tomatoes, peas, salt, pepper, and oregano; cook for 20 minutes. During last 5 minutes of cooking, add pasta and parsley. Serve hot.
