COCONUT CAKE WHOOPIE PIES Yield: 6 whoopie pies ½ cup salted butter, softened 1 cup firmly packed light brown sugar 1 large egg 2½ cups all-purpose flour 1¼ teaspoons baking soda 1 teaspoon salt 1 cup whole buttermilk 1 teaspoon vanilla extract ½ teaspoon almond extract Cream Cheese Coconut Filling (recipe follows) 1 cup sweetened, flaked coconut, toasted 1.
