crab cake sandwich
Yield: 6 servings
1 cup crumbled saltine crackers (approximately 8 crackers)
1⁄2 cup chopped red bell pepper
1⁄3 cup thinly sliced green onion
1⁄3 cup mayonnaise
1 large egg
1 tablespoon fresh lemon juice
1 teaspoon Old Bay Seasoning
1⁄4 teaspoon salt
11⁄2 pounds fresh lump crabmeat, drained and shell pieces removed
3 tablespoons butter
6 lettuce leaves
6 poppy seed kaiser rolls Rémoulade Sauce (recipe follows)
1. In a large bowl, combine crackers, bell pepper, green onion, mayonnaise, egg, lemon juice, Old Bay, and salt, stirring well. Gently fold crabmeat into mixture. Shape into 6 patties.
2. In a large nonstick skillet, heat butter over medium-high heat. Add patties, and cook until golden brown, approximately 3 minutes per side. Keep warm.
