1 (41/2-pound) beef brisket, trimmed
2 tablespoons brown sugar
11/2 teaspoons ancho chili powder
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon chopped parsley
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Flour tortillas
Toppings: shredded cheese, sour cream,chopped tomatoes, salsa, guacamole,shredded lettuce
•Preheat oven to 300°.
• Place brisket, fat side down, in a roasting pan.
• Combine brown sugar, powders, parsley, salt, and pepper. Rub spice mixture into top of brisket. Cover and seal pan with foil. Bake for 41/2 hours.
• Remove brisket from pan; let stand for 15 minutes. Cut brisket across grain into thin slices, using a sharp knife. Serve in warm flour tortillas with desired toppings.
