GRILLED CHICKEN QUESADILLAS

4 jalapeño peppers, halved lengthwise and seeded
3 peaches, peeled, halved, and pitted
1 yellow onion, sliced ½ inch thick
4 cups chopped cooked chicken
4 cups shredded Monterey jack cheese
2 green onions, chopped
3 tablespoons chopped fresh cilantro
1 tablespoon lime zest
1 tablespoon fresh lime juice
1 teaspoon kosher salt
4 (10-inch) flour tortillas
Grilled limes, to serve
1. Spray grill rack with nonstick nonflammable cooking spray. Preheat grill to medium-high heat (400° to 450°).
