1⁄2 cup unsalted butter, softened
1⁄2 cup granulated sugar
1⁄2 cup firmly packed light brown sugar
1 large egg
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1⁄2 teaspoon salt
1⁄4 teaspoon ground ginger
1⁄8 teaspoon ground nutmeg
1⁄8 teaspoon ground allspice
2⁄3 cup crushed pineapple, drained,
2 tablespoons juice reserved
1⁄2 cup mashed ripe banana
1 teaspoon vanilla extract
3 cups sweetened flaked coconut
