Spicy Sausage & Rice Skillet
The spicy sausage in this quick skillet dish gives it a bit of a kick, and the sliced apples are a pleasant, tart surprise everyone will love.

(12 oz.) fully cooked spicy chicken sausage links, halved lengthwise and cut into ½-in. slices1 Tbsp. olive oil2 medium yellow summer squash, chopped2 medium zucchini, chopped1 large sweet red pepper, chopped1 medium onion, chopped1 medium tart apple, cut into ¼-in. slices1 garlic clove, minced½ tsp. salt1 pkg. (8.80 oz.) ready-to-serve brown rice1 can (15 oz.) black beans, rinsed and drained¼ to ½ cup water
