There are countless kinds of cheese on the market. When assembling your board, select at least one from each category: soft, semisoft, firm, blue and aged.
MMMEATS
Now’s not the time for ordinary deli lunchmeat. Think Calabrese and Genoa salami, mortadella and prosciutto.
DIPS & SPREADS
Honey and mustard pair well with meats and cheeses. Or make Southern Pimento Cheese Spread by combining 1½ cups shredded cheddar cheese, 1 jar (4 oz.) diced pimentos, drained and finely chopped, and 1⁄3 cup mayonnaise. Chill for at least 1 hour before serving.
TASTY EXTRAS
Add assorted crackers, olives, pickles, fruits, pepper drops and sweet and savory nuts.
