Berry Nectarine Salad
In my circle, no summer celebration is complete without this most-requested vibrant medley of fruit.

Makes: 8 servings
4 medium nectarines, sliced¼ cup sugar1 tsp. lemon juice½ tsp. ground ginger3 oz. reduced-fat cream cheese2 cups fresh raspberries1 cup fresh blueberries
1. In a large bowl, toss nectarines with sugar, lemon juice and ginger. Refrigerate, covered, for 1 hour, stirring once.
2. Drain nectarines, reserving juices. Gradually beat reserved juices into cream cheese. Gently combine nectarines and berries; serve with cream cheese mixture.
