Stir-Fried Zucchini
Zucchini is one of our fave veggies, so this simple side dish is served often in summertime.

2 lbs. sliced zucchini2 garlic cloves, minced¼ cup olive oil1 tsp. salt½ tsp. Italian seasoning¼ tsp. pepper
In a large skillet, saute the zucchini and garlic in oil until the zucchini is crisp-tender, about 5 minutes. Sprinkle with seasonings. Serve immediately. ½ CUP 77 cal., 7g fat (1g sat. fat), 0 chol., 299mg sod., 4g carb. (2g sugars, 1g fiber), 1g pro.
