Swiss Potato Soup
Half an hour is all you need to get this hearty soup on the table!

Takes: 30 min. Makes: 4 servings (1 qt.)
5 bacon strips, diced1 medium onion, chopped2 cups water4 medium potatoes, peeled and cubed1½ tsp. salt⅛ tsp. pepper⅓ cup all-purpose flour2 cups 2% milk1 cup shredded Swiss cheese
1. In a saucepan, cook bacon until crisp; remove to paper towels. Drain, reserving 1 Tbsp. drippings.
2. Saute onion in the drippings until tender. Add water, potatoes, salt and pepper. Bring to a boil. Reduce heat; simmer, uncovered, until potatoes are tender, 7-10 minutes.
3. Combine the flour and milk until smooth; gradually stir into potato mixture. Bring to a boil; cook and stir until thickened and bubbly, about 2 minutes.…
