Baby Kale Salad with Avocado-Lime Dressing
Combine 6 cups baby kale salad blend, 1 cup julienned zucchini and 1/2 cup thinly sliced sweet onion. In a blender, process half an avocado, 1/2 cup fat-free plain yogurt, 3 chopped green onions, 2 Tbsp. parsley, 2 Tbsp. lime juice, 1 garlic clove, 1/4 tsp. salt and 1/8 tsp. pepper. Toss with salad.
