250g pkt microwave brown rice 600g skinless salmon fillets, coarsely chopped 80g (1/3 cup) Thai red curry paste 2 green shallots, finely chopped, plus extra, shredded, to serve (optional) 1 lime, rind finely grated, quartered 1 tbs coconut oil 1 baby cos lettuce, quartered 8 baby qukes, quartered 1 large carrot, peeled, peeled into ribbons Bought Thai dressing, to serve 1 Microwave the rice on High for 30-45 seconds or until grains just separate. Place rice, salmon, curry paste, shallot and lime rind in a food processor. Season. Pulse 10-12 times or until finely chopped and mixture just comes together. (Do not overprocess.) Shape mixture into 8 rounded patties.
