Also known as romano or runner beans, flat beans are longer and flatter than green beans, but can be used in much the same way They’re ready to eat when they ‘snap’ when broken in half. Young beans can be eaten raw, but otherwise they’re generally best suited to being quickly grilled, barbecued or steamed, or slow cooked in braises and casseroles.
