Call it my Achilles’ heel, weak spot, guilty pleasure or fatal flaw, but whether it be pappardelle, rigatoni, penne, orecchiette, angel hair or risoni, the long and short of it is that I just can’t say no to pasta. So when I was creating the recipes for our Pasta Pronto feature (p22) this month, I asked myself, ‘could life get any better’? Enter the One-pot Pizza Pasta (p29). NO-BAKE HAZELNUT HEDGEHOG SLICE SERVES 20 PREP 30 MINUTES (PLUS REFRIGERATION) COOK 2 MINUTES 2 x 143g packets Baci Perugina Original Dark Chocolates, unwrapped, plus extra, chopped, to serve 200g digestive biscuits, broken into pieces ½ cup vanilla marshmallows, halved ½ cup dried cranberries, plus extra to serve ½ cup pistachio kernels, toasted, plus extra, chopped, to serve 2 x 200g blocks dark chocolate, chopped 200g block milk chocolate, chopped 250g butter, chopped ¹/ ³ cup golden syrup Dutch processed cocoa powder, to serve 1 Grease a 7cm-deep, 9.5cm x 19.5cm loaf pan. CREAMY MUSHROOM RISOTTO SOUP SERVES 4 PREP 15 MINUTES COOK 50 MINUTES 1.5 litres salt-reduced vegetable stock 2 fresh thyme sprigs, plus extra to serve 60g butter 200g Swiss brown mushrooms, sliced 200g button mushrooms, halved 150g packet pasta mushroom mix (see notes) 1 brown onion, finely chopped 1 garlic clove, crushed 1½ cups arborio rice ¹/ ³ cup light thickened cream for cooking ½ cup finely grated parmesan, plus extra to serve 1 Place stock and thyme sprigs in a saucepan over medium-high heat. Cover. Bring to the boil. Reduce heat to low. 2 Meanwhile, melt 40g butter in a large heavy-based saucepan over high heat. Add mushrooms.
