Cinnamon Rolls
Makes about 2 dozen
2 cups warm whole milk (105° to 110°)
2 (¼-ounce) packages active dry yeast
½ cup sugar, divided
7 to 8 cups bread flour, divided
1 tablespoon salt
1 cup vegetable oil
2 large eggs
1 cup firmly packed dark brown sugar
1 cup finely chopped pecans
2 teaspoons ground cinnamon
½ cup butter, melted
Cinnamon Cream Cheese Icing (recipe follows)
1. In a small bowl, combine warm milk, yeast, and ¼ cup sugar; let stand for 5 minutes.
2. In a medium bowl, combine 5 cups bread flour, remaining ¼ cup sugar, and salt.
